Creamy Baked Potatoes

Ingredients: 4 boiled potatoes, 1/2 cups cream, 1/2 tablespoons salt and pepper, fresh coriander, finely chopped, 6 tablespoons grated cheese

Method of Preparation: Start with cooling the potatoes and peel them. Then slightly beat the cream and mix it with salt, pepper, and coriander to taste. Put a tablespoon of oil over the baking dish. Rub it all over the base. Put 1/3 of the potatoes into the dish. Put 1/3 of the cream over, and then add 2 tablespoons of the cheese as well. Repeat this process, ending with cheese on top. As you are ready to eat and serve, preheat the oven to 180 C, bake potatoes for about 20 minutes, or till the top is nicely browned.

Clam Stuffed Mushroom

Ingredients: Appetizers, 1/2 cup Butter, 2 lb Mushrooms cut with 1-1/2" to 2" in diameter, 1 cup Minced clams with liquid, 1 Clove garlic minced, 1/2 cup Dried bread crumbs, 1/3 cup Parsley chopped, Salt, Ground black pepper and Lemon juice to taste

Method of Preparation: First, melt butter in a saucepan. Remove and dice mushrooms stems. Dip mushroom caps in butter and place rounded side down on a rack on a cookie sheet. Drain clams and reserve liquid. In melted butter, saute mushrooms stems and garlic. Add clam liquid and simmer until mushroom stems are tender. Remove from heat and stir in the breadcrumbs, parsley, salt and pepper. Spoon all mixture into mushroom caps. Broil about 6 " from heat for about 8 minutes, until mushrooms are tender and tops are lightly browned. Sprinkle a few drops of lemon juice on each and serve hot.

Bacon and Smoked Oysters

Ingredients: Appetizers, Seafood, 2 cup Smoked oysters, 1/4 cup Light vegetable oil, 1/2 lb Bacon strips, 40 Round wooden toothpicks, 3 tbsp Garlic, minced

Method of Preparation: Start with cutting bacon strips in thirds, Wrap a bacon slice around each oyster and place a toothpick through to hold it in place. In a medium skillet, heat oil, and add garlic. Cook wrapped oysters in oil until bacon is crisp. Remove from pan and drain on a paper towel to drain.

Blue Cheese and Walnuts Appetizers

Ingredients: 1 cup Walnuts, 1 cup Crumbled blue cheese, 1 Egg beaten with 1 tbsp water

Method of Preparation: Start with chopping 1 cup of walnuts (depending on the size of brie you need to cover) and stir into 1 cup crumbled blue cheese. Press onto the top of the Brie and carefully wrap a sheet of thawed puff pastry dough. Use fingers wet with cold water to seal underside of pastry. Cut off excess to make cutouts and adhere to top of Brie with a little cold water. Brush with egg mixture. Bake on a cookie sheet covered with baking parchment in a 375 oven for about 20 minutes until golden. Let Baked Brie stand for 20-30 min before cutting to let it firm up a little.

Caviar Heart Kisses

Ingredients: 1 small Cucumber (trimmed), 1/3 cup Sour Cream, 1 tbsp Dried dill weed, ground black pepper to taste, 1 Jar red salmon caviar, Fresh dill sprigs, 8 Thin slices whole-wheat bread, Butter or margarine, Slice cucumber into 1/4-inch rounds.

Method of Preparation: In a small bowl, combine sour cream, dried dill and pepper. Place one teaspoon of the sour cream mixture on each cucumber slice. Garnish each with about 1/2 tbsp caviar and a dill sprig. Cut bread slices with heart-shaped cookie cutter, toast and spread butter. Place cucumber slices in center of serving plate and surround with toast hearts.

Chocolate Caramel Brownies

Ingredients: 14 ounces caramels, 1/2 cup evaporated milk, 1 (18.25 ounce) package German chocolate cake mix, 1/3 cup evaporated milk, 3/4 cup butter, melted, 1/4 cup chopped pecans, 2 cups milk chocolate chips.

Method of Preparation: Peel caramels and place in a microwave-safe bowl. Stir in 1/2-cup evaporated milk. Heat and stir until all caramels are melted, Preheat oven to 350 degrees F (175 degrees C) Grease a 9×13 inch pan, In a large mixing bowl, mix together cake mix, 1/3 cup evaporated milk, melted butter, and chopped pecans. Place 1/2 of the batter in prepared baking pan, bake for 8 minutes, and Place the remaining batter into the fridge. Remove brownies from oven and sprinkle chocolate chips on top. Drizzle caramel sauce over chocolate chips. Remove brownie mix from refrigerator. Using a teaspoon, make small balls with the batter and smash flat. Very carefully, place on top of the Carmel sauce until the top is completely covered, Bake for an additional 20 minutes. Remove and let cool.

Candy Bar Fudge

Ingredients: 1/2 cup butter, 1/3 cup unsweetened cocoa powder, 1/4 cup packed brown sugar, 1/4 cup milk, 3-1/2 cups powdered sugar, 1 teaspoon vanilla extract, 30 individually wrapped caramels, unwrapped, 1 tablespoon water, 2 cups salted peanuts, 1/2 cup semisweet chocolate chips, 1/2 cup milk chocolate chips.

Method of Preparation: Grease an 8×8 inch square baking pan, in a microwave-safe bowl, combine butter, cocoa powder, brown sugar and milk. Microwave until mixture boils. Stir in powdered sugar and vanilla extract. Pour into prepared pan, in a microwave-safe bowl, microwave caramels and water until caramels melt. Stir in peanuts. Spread mixture over chocolate layer, in a small microwave-safe bowl, combine semisweet and milk chocolate chips; microwave until melted. Spread over caramel layer. Chill for 2 hours, or until firm.

Valentines Pizza

Ingredients: 3 cups bread flour, 1 (.25 ounce) envelope active dry yeast, 1 1/4 cups warm water, 3 tablespoons extra virgin olive oil, divided, 3 tablespoons chopped fresh rosemary, 1 (14 ounce) can pizza sauce, 3 cups shredded mozzarella cheese, 2 ripe tomatoes, sliced, 1 zucchini, sliced, 15 slices vegetarian pepperoni, 1 (2.25 ounce) can sliced black olives

Method of Preparation: Place bread flour, yeast, water, and 2 tablespoons olive oil into the bread machine pan in the order recommended by the manufacturer. Select the Dough setting. Press Start. When the dough is finished, knead rosemary into the dough, Preheat oven to 400 degrees F (200 degrees C), Divide the dough into three portions. Shape each piece into a heart shape about 1/2 inch thick. Brush with remaining olive oil, and spread a thin layer of pizza sauce on each pizza. Sprinkle cheese over pizza sauce, and arrange tomatoes, zucchini, pepperoni, and sliced olives on top, Bake for about 15 to 20 minutes, or until cheese has melted and crust is browned.
